Cranberry, Feta and Walnut Salad

 Salad that everybody seemed to like. We did not prepare the dressing as the recipe suggests instead we used Balsamic Vinaigrette dressing.

4 cups mixed salad greens (I use leaf lettuce, endive and radiccio)
2 cups dried sweetened cranberries
8 ounces crumbled feta cheese
1 cup walnut pieces, toasted
4 tablespoons balsamic vinegar
2 tablespoons honey
2 teaspoons Dijon mustard
1/2 teaspoon ground black pepper
1/2 cup extra-virgin olive oil

Directions:

1. Toss greens, cranberries, cheese and walnuts in large bowl.
2. Mix vinegar, honey, mustard and pepper with wire whisk until well blended.
3. Gradually add oil, whisking constantly until well blended.
4. Pour over salad; toss to coat.
5. Serve immediately.
