Blueberry muffins

Dry ingredients
2 1/2 c all-purpose flour (I used whole wheat and add two tablespoons of ground flax seed meal)
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 c brown sugar (I prefer coconut sugar except when taking snack to preschool due to nut allergies)
Wet ingredients
1 c plain yogurt (I use non-fat Greek yogurt)
2 eggs, beaten

1/2 c unsalted butter, melted

1 1/3 c of fresh or frozen blueberries

Preheat the oven to 400 degrees.

Sift together all dry ingredients in a large bowl. Add yogurt, eggs, and butter and mix just until dry ingredients are moistened. **Do not use a beater.** Fold in the berries. Divide batter in a 12 muffin nonstick pan, 2/3 full. Bake at 400 degrees between 20-25 minutes.

A really good pork recipe

1кг свинины (желательно задок), 0,5л сухого белого вина

СОУС

300~500г свежих грибов, 2 ст ложки лимонного сока, 100г сливочного масла, 1 маленькая луковица, 400мл сливок, 3~4 помидора или 2 ст ложки томатной пасты или 250мл томатного сока, соль, перец

Приготовление

Из толстого куска свинины вырезать кость и срезать сало, оставив не более 1см.
Кусок нарезать ломтями толщиной 1~1,5см (нарезку производить вдоль куска, т.е. разрез нужно делать параллельно плоскости стола).

Ломти положить в глубокий противень, посолить, поперчить, и налить 1/2 стакана вина.
Противень сверху закрыть фольгой и поставить в духовку, нагретую до t=200°С на 45 мин.
Снять фольгу, температуру прибавить до 220°С и потушить еще 15 мин.

Во время готовки мяса сделать соус.
Грибы порезать тонкими дольками и положить в кастрюлю. Добавить 2 ст ложки воды, лимонный сок и соль. Закрыть крышкой, поставить на сильный огонь и довести до кипения. Проварить 2 мин.
Сцедить жидкость с грибов в сковороду, влить оставшееся вино и положить мелко порезанный лук. Готовить смесь на сильном огне, пока она не уварится на половину.

Добавить помидоры и сок из противеня с мясом (после того, как мясо сготовится).
Уварить еще в два раза при сильном кипении.
Добавить сливки и подержать на огне еще 5~10мин, пока соус не загустеет.
Снять сковороду с огня и перемешать соус со сливочным маслом. По вкусу добавить соли и перца.

Поставить противень в разогретую до max духовку на несколько минут, чтобы поверхность начала подрумяниваться. Не допускать полного выкипания соуса.


PUMPKIN EARTHQUAKE CAKE

An ok cake to use some pumpkin puree

Ingredients
  • ½ cup shredded coconut
  • ½ cup chopped pecans
For the cake:
  • 1 (15.25 oz) yellow cake mix
  • 3 eggs
  • 1 cup canned pumpkin puree
  • ¾ cup water
  • ½ cup oil
  • ⅓ cup granulated sugar
  • 2 teaspoons pumpkin pie spice
Filling:
  • 1 (8 oz) package cream cheese, softened
  • ½ cup butter, melted
  • 3 cups powdered sugar
Topping:
    • ½ cup milk chocolate chips (or semi-sweet chocolate chips)

  1. Preheat oven to 350 degrees and spray a 9×13 baking dish with cooking spray.
  2. Sprinkle the coconut and pecans evenly over the bottom of the dish.
  3. For the cake: In a large bowl, combine the cake mix, eggs, pumpkin, water, oil, sugar, and pumpkin pie spice. Mix until well combined and pour over the coconut and pecans.
  4. For the filling: Place cream cheese in a medium bowl and microwave for about a minute or until it’s really soft. Add the melted butter and stir until combined. Add the powdered sugar and stir until smooth.
  5. Place dollops of the filling all over the top of the cake batter and then using a knife, gently swirl it through.
  6. Sprinkle with chocolate chips and bake for 30-40 minutes. Because of the filling the cake will not look completely done but will as it cools. Serve warm. Great with ice cream too!

 

 

 

Naan Bread Margherita Pizza with Prosciutto

The best quick pizza.

Ingredients

  • 1 large roma tomato, thinly sliced
  • salt and ground black pepper to taste
  • 1 slice prosciutto, sliced
  • 6 leaves fresh basil, roughly chopped
  • 2 tablespoons grated Parmesan cheese
Directions
  1. Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  2. Place naan breads on the prepared baking sheet; brush each naan with olive oil. Spread green onion and garlic over each naan. Arrange 4 slices mozzarella cheese onto each naan; top with tomato slices. Season tomatoes with salt and pepper. Top tomato layers with prosciutto, basil, and Parmesan cheese.
  3. Bake in the preheated oven until pizza is crispy on the edges and cheese is melted, about 8 minutes. Turn on oven’s broiler and broil until cheese is lightly browned and bubbling, about 2 minutes.

Risotto

Just had an extra 3/4 cup pumpkin puree (gross) but the risotto turned out quite well.

Saute 1 chopped onion and 10 sage leaves in olive oil in a saucepan. Stir in 2 cups arborio rice. Stir in 1/2 cup white wine until absorbed. Gradually add 6 cups chicken broth, stirring until absorbed; whisk in 3/4 cup pumpkin. Stir in 2 tablespoons butter and 1 cup grated parmesan.

Ингредиенты:

  • 300-400 г смеси из орехов и сухофруктов (автор использовала 2 вида изюма, чернослив, сушеную клюкву, инжир и грецкие орехи)
  • 2 яйца
  • 6 ст. л. коричневого сахара
  • 6 ст. л. муки
  • 1/2 ч. л. разрыхлителя

Приготовление:

  1. Курагу и чернослив порезать на кусочки и смешать с орешками и остальными сухофруктами.
  2. Яйца взбить венчиком и добавить в смесь сухофруктов.
  3. Добавить сахар, муку и разрыхлитель, перемешать.
  4. Форму смазать маслом и вылить в нее полученную массу, запекать в предварительно разогретой до 180 градусов духовке около 45 минут.

 

Potato-Kale Soup

Good soup.Easy.

Ingredients

  • 3 tbsp. extra-virgin olive oil
  • 4 medium shallots, sliced
  • 4 large stalks celery, sliced
  • 8 c. chicken broth
  • 3 medium russet potatoes (about 1 3/4 lbs.), peeled and cut into 1/2″ chunks
  • 2 oz. Spanish chorizo, finely chopped
  • 4 c. packed chopped kale leaves (about 4 oz.)
  • 1 tbsp. fresh lemon juice

Directions

  1. In 5- to 6-quart saucepot, on medium, combine 2 tablespoons oil, shallots, celery, and 1/2 teaspoon salt; cook 10 minutes or until shallots have browned, stirring occasionally. Add broth and potatoes. Heat to simmering on high. Reduce heat; simmer 20 minutes or until potatoes are very tender, stirring occasionally.
  2. Meanwhile, in 10″ skillet, on medium, combine chorizo and remaining 1 tablespoon oil; cook 8 minutes or until fat has rendered and chorizo is crisp, stirring frequently. Set aside.
  3. When potatoes are tender, add kale to pot. Simmer 5 minutes. In batches in blender or with immersion blender, puree soup until smooth; return to pot. Stir in lemon juice and 1/2 teaspoon pepper. To serve, garnish with chorizo oil mixture.

Quiche in sweet potato crust

Super light but very good quiche.

Ingredients
2 medium sweet potatoes
1 teaspoon canola oil
1 (5-ounce) bag baby spinach
1/2 cup 1% low-fat milk
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon crushed red pepper
4 large eggs
2 large egg whites
1.5 ounces feta cheese, crumbled

1. Preheat the oven to 350°, then peel and slice sweet potatoes. I sliced mine using a mandoline, but a knife works great as well. The mandoline speeds up the process significantly and gives you even slices. Coat a pie dish with cooking spray, then fill the bottom of the dish with a layer of sweet potato slices. Cut the sweet potato rounds in half and fill around the edges of the pie dish; round side facing up. Once the entire dish is filled, coat one more time with cooking spray. Bake for 20 minutes. Turn heat up to 375°.

2. For the filling, heat a nonstick skillet over medium heat. Add spinach; sauté 3 minutes. Remove from heat; cool.

3. Combine milk and next 5 ingredients in a bowl; stir with a whisk. Arrange spinach mixture in crust; pour egg mixture over spinach. Sprinkle with feta. Bake at 375° for 35 minutes. Let stand 5 minutes; cut into 4 wedges.

Chicken and Veggie Teriyaki Stir-Fry Bowl

Good stuff — other meat is good too.

INGREDIENTS

3 chicken breasts, cubed
Salt, to taste
Pepper, to taste
1 teaspoon crushed garlic
½ cup soy sauce
⅓ cup honey
1½ tablespoons sesame seeds
1 onion, sliced
2 small bell peppers, thinly sliced
2 cups broccoli
1 green onion, thinly sliced
Cooked white rice

PREPARATION

1. In a pan, cook cut chicken over medium-high heat until almost done.
2. Reduce heat to medium and stir in the crushed garlic.
3. Add in the soy sauce, honey, and 1 tablespoon of the sesame seeds. Stir until thickened.
4. Remove the chicken from the pan, leaving the sauce, and add the vegetables to the pan.
5. Cover the pan for several minutes and cook until the vegetables begin to soften, then remove the lid and stir until the sauce is thick again.

Cauliflower Fritter

3 cups of cauliflower
2 tsp salt
1 tsp black pepper
2 garlic cloves, minced
1/2 cup of chopped onions
1/4 cup fo chopped parsley
1/2 cup of wheat flour
1/3 cup of grated parmesan
1 egg
Additional wheat flour for coating
Oil for frying

Directions:
Microwave cauliflower for 15 minutes or until tender. Mash cauliflower, mix in salt, pepper, garlic, onions, parsley, flour, grated parmesan and egg. From patties with the mashed cauliflower mix. Coat both sides of patties with wheat flour. Fry in oil until golden brown and crispy on both sides. Enjoy with sour cream and chives.
