HONEY BALSAMIC SHEET PAN CHICKEN (found on fb, Candy shared it have not tried yet)

Serves 4 to 6

INGREDIENTS
¼ cup balsamic vinegar
6 tablespoons honey
2 to 3 tablespoons olive oil, divided
2 cloves garlic, minced
1 teaspoon dried thyme
¾ teaspoon dried rosemary
½ teaspoon red chili flakes
¾ teaspoon kosher salt
¼ teaspoon black pepper
2 pounds chicken breasts (4 each), trimmed
1­½ pounds baby red potatoes, quartered
1 pint cherry tomatoes
1 pound green beans, trimmed
DIRECTIONS
Preheat the oven to 425 degrees Fahrenheit (175 degrees Celsius).
In a medium bowl, combine the balsamic vinegar, honey, a tablespoon of olive oil, garlic, thyme, rosemary, chili flakes, salt and pepper. Stir well to mix.
Place the chicken breasts in a resealable plastic bag and pour the marinade over the top. Seal and toss the chicken to evenly coat. Marinate for at least 30 minutes.
While the chicken marinates, place the potatoes and cherry tomatoes on a sheet pan. Drizzle with the remaining olive oil, season with salt and pepper, and stir to coat. Bake for 25 minutes.
Remove the sheet pan from the oven and toss the green beans with the potatoes and tomatoes.
Remove the marinated chicken breasts from the plastic bag, reserving the remaining marinade in the bag. Place the marinated chicken, evenly spaced, on top of the vegetables. Pour the marinade from the bag over the top of the chicken and vegetables.
Return the sheet pan to the oven. Bake for 30 to ­40 minutes, periodically basting the chicken breasts with the pan juices, until the internal temperature of the chicken reaches 165 degrees Fahrenheit (74 degrees Celsius).
Allow the chicken to rest for 5 to ­10 minutes. Spoon the pan juices over the top of each chicken breast before serving.

Black Bean and Yam Quesadilla

An ok quesadilla

Ingredients

  • 1 teaspoon olive oil, plus extra for spraying
  • 1/2 cup finely chopped onions
  • 1 clove garlic, finely chopped
  • 1 teaspoon Mexican seasoning (available in bulk spices)
  • 2 teaspoons water
  • 1 cup grated yam (about 1/2 yam)
  • 1/4 cup canned black beans, rinsed and drained
  • Salt and pepper, to taste
  • 2 corn or wheat tortillas
  • 1/3 cup grated cheddar or Monterey Jack cheese
  • Prepared salsa

Preparation

Heat oil in a nonstick skillet over medium heat. Add onions and garlic and sauté for
 3 minutes or until onions are soft. Add Mexican seasoning and water and cook 1 more minute, stirring. Stir in yams and beans. Cover and cook for about 6 minutes, until yams are tender but not mushy. Season with salt and pepper. Transfer mixture to a bowl.

Place 1 tortilla in the skillet; spray with olive oil. Turn over and spray the other side. Add some yam mixture to half of the tortilla, top with some cheese and fold tortilla in half. Cook in a skillet on each side for about 2 minutes, until cheese melts and filling is warm. Repeat with 
other tortilla. Serve with prepared salsa.

Chicken in Creamy Tomato Curry: Chicken Tikka Masala

My first Indian food.

Ingredients
Marinade:
1 cup plain yogurt, whisked until smooth
3 tablespoons Ginger-Garlic Paste, recipe follows (or 1 tablespoon grated fresh ginger and 3 cloves garlic put through a garlic press or finely minced)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 pound boneless, skinless chicken thighs, poked with a fork, and cut into large bite-sized chunks
Sauce:
2 teaspoons olive oil
3 tablespoons butter
1/3 cup Ginger-Garlic Paste, recipe follows (or 6 cloves garlic and 2-inch thumb ginger minced)
2 serrano peppers, minced (seeds removed if you don’t want it spicy)
2 tablespoons tomato paste
1 teaspoon garam masala
2 teaspoons paprika
8 Roma tomatoes, diced
1 1/2 teaspoons kosher salt
1 to 2 cups water
Oil, for grilling
1 tablespoon dried fenugreek leaves (optional)
1/2 cup heavy cream
Minced fresh cilantro, for garnish
Cooked rice, naan, or crusty piece of bread, for serving
Ginger-Garlic Paste:
1/2 cup cloves garlic, whole
1/2 cup fresh ginger, peeled, cut into 1/2-inch slices
1/4 cup canola oil

Directions:

For the marinade: In a large bowl, mix together the marinade ingredients. Add the chicken and toss to coat. Marinate at least 30 minutes, or in the refrigerator up to overnight.
For the sauce: When you’re ready to make the curry, place a large skillet over medium heat and add the olive oil and butter. When the butter has melted, add the Ginger-Garlic Paste and serrano peppers. Saute until lightly browned around the edges. Add the tomato paste and cook until the tomato has darkened in color, about 3 minutes. Add the garam masala and the paprika and saute for about 1 minute to draw out their flavors.
Add the tomatoes, salt, and 1 cup water. Bring to a boil, turn down to a simmer, and cook until thickened, about 20 minutes. You may need more water depending on how much liquid the tomatoes give off.
Meanwhile, fire up your grill. When it is nice and hot, lightly brush it with oil. Place the chicken on the grill, shaking off some of the excess marinade. Cook until it’s charred, about 2 minutes on each side. (Don’t worry that the chicken will still be a little uncooked, it finishes cooking in the sauce).
Pour the sauce into a blender or food processor, or use an immersion blender, and process until smooth. Pour back into the skillet and bring back up to a boil. Add the chicken and fenugreek leaves, if using. Take the heat down to a simmer and cook for about 10 minutes. Add the cream and stir through. Garnish with minced fresh cilantro, and serve over rice, with naan, or a crusty piece of bread!
Ginger-Garlic Paste:
Throw the garlic, ginger, and canola oil in a mini-food processor and let it go until it forms a semi-smooth paste. There will still be tiny little pieces in there, but overall, it should resemble a paste.
Save what you don’t use in a small glass jar. It should last in the fridge for 2 to 3 weeks. It’s a delicious addition to marinades, pasta sauces, stir fry sauces, slow-cooker recipes, gravy etc. We always had a jar of this stuff in our fridge growing up.

Broccoli Cheese Soup

A good soup a bit too salty to my taste.

Ingredients
4 heads broccoli, cut into 1-inch florets
Olive oil, for drizzling
Salt and freshly ground black pepper
1 stick (4 ounces) unsalted butter
1 whole onion, diced
1/3 cup all-purpose flour
4 cups whole milk
2 cups half-and-half
Pinch nutmeg
3 cups grated cheese (mild Cheddar, sharp Cheddar, Jack, etc.), plus more for garnish, optional
1 cup chicken broth, optional

Preheat the oven to 375 degrees F.
Remove 2 cups of the broccoli florets, cut in half, drizzle with olive oil and sprinkle with salt and pepper. Place on a baking sheet cut-side down and bake until the florets begin to crisp and turn slightly brown, about 20 minutes.
Meanwhile, melt the butter in a pot over medium heat. Add the onions and cook until softened, 3 to 4 minutes. Sprinkle the flour on top. Stir to combine and cook until the flour is absorbed and smells lightly toasted, 1 minute or so. Add the milk and half-and half. Add the nutmeg, then the broccoli, a small dash of salt and plenty of black pepper. Cover the pot and reduce the heat to low. Simmer until the broccoli is tender, 20 to 30 minutes. Stir in the cheese and allow to melt.
Taste and season with salt and pepper as needed. Serve the soup as is, mash with a potato masher to break up the broccoli a bit, or transfer to a blender in two batches and puree completely. (If you puree in a blender, return the soup to the heat to heat back up. Splash in some chicken broth if needed for thinning.) Garnish with the toasted broccoli or grated cheese and serve.

 

Rice, Ham And Cheese Casserole Recipe

An ok casserole. Next time add corn.

Ingredients

  • 4 cups of cooked rice
  • 100 g of grated mozzarella
  • 100 g ham, cut into small cubes
  • 1 carrot, grated
  • 2 tablespoons finely chopped parsley
  • 2 eggs
  • 1 cup of milk
  • 150 g cream cheese
  • 1 cup grated Parmesan cheese
  • salt and pepper to taste
1 Preparation In a bowl, mix rice, mozzarella, ham, carrots and parsley.
2 Grease a baking dish with oil.
3 Blender, beat the eggs, milk, cream cheese, grated cheese, salt and pepper
4 Pour the rice and bake in a preheated oven at 200 ° C for 30 minutes or until golden brown.

Crustless Caprese Quiche

Made this quiche with regular crust.

Ingredients
Nonstick cooking spray
1/3 cup plus 2 tablespoons whole wheat or other whole grain breadcrumbs
2 teaspoons extra-virgin olive oil
1 medium onion, diced
Kosher salt
4 plum tomatoes (2 chopped and 2 thinly sliced crosswise)
2 large eggs plus 2 large egg whites
1/2 cup part-skim ricotta cheese
1/2 cup 2-percent milk
1/4 cup packed fresh basil leaves, thinly sliced, plus 1 sprig for garnish
4 ounces shredded part-skim mozzarella

Directions
Preheat the oven to 350 degrees F. Coat a 9-inch deep-sided pie pan with nonstick cooking spray. Evenly sprinkle 2 tablespoons of the breadcrumbs into the pan.
Heat the oil in a large nonstick skillet over medium-low heat. Add the onion and 1/8 teaspoon salt and cover the skillet. Cook, stirring occasionally, until the onions soften without color, about 15 minutes. Stir in the chopped tomatoes and cook for 1 minute. Transfer to a medium bowl and set aside.
Meanwhile, add the eggs, egg whites, ricotta, milk, the remaining 1/3 cup breadcrumbs and 3/4 teaspoon salt to a blender until well combined and smooth. Stir in the sliced basil and the onion-tomato mixture.
Pour the egg mixture into the prepared pie pan. Sprinkle with the mozzarella. Arrange the sliced tomatoes in an overlapping style around the top.
Bake until the eggs are set and the cheese is lightly browned, about 35 minutes. Let stand for 10 minutes to complete the cooking process. Garnish with the fresh basil sprig. Slice into 4 wedges with a sharp knife and serve.

 

Quiche with Country Ham

Next time invest more time in finding new potatoes. Otherwise, a good quiche.

Ingredients
Vegetable oil, for poaching and sauteing
1/2 cup diced country ham
3 new potatoes, sliced 1/4-inch thick (about 1 1/2 cups)
1 homemade or store-bought refrigerated 9-inch pie crust
2 to 3 cups dried beans, to use as pie weights
4 large eggs, slightly beaten
3/4 cup half-and-half
Pinch kosher salt
1 teaspoon black pepper
1 cup grated aged gouda
1 green onion, chopped

Directions

Preheat the oven to 350 degrees F.
Heat 1 tablespoon of the oil in a medium skillet over medium heat. Add the ham and saute until just starting to brown.
Place the potatoes in a small saucepan and cover with vegetable oil. Cook over low heat until the oil just starts to bubble and the potatoes are tender, about 15 minutes. Remove the potatoes and place on a paper towel-lined plate.
Meanwhile, line a 9-inch pie pan with the prepared pie crust and pierce with a fork. Cover with parchment and fill with the dried beans. Blind bake the crust for 10 minutes. Let cool, then carefully remove and discard the paper and beans.
In a medium bowl, beat together the eggs, half-and-half, salt and pepper. Layer the empty pie shell with the potatoes, ham, and 1/2 cup of the cheese. Pour the egg mixture over the filling. Sprinkle the remaining 1/2 cup cheese and the green onions over the top. Bake on the bottom rack of the oven until the center just sets and the top is golden, 35 to 40 minutes. Let cool 10 minutes before slicing.

1,5~2кг говядины, 2 крупные луковицы (250~300г), 1~2 крупные моркови (200~250г), при желании 200~250г черешкового сельдерея и/или болгарского перца,2~3 ст ложки растительного масла (35~50г), 1 ч ложка сахара, 100г томатной пасты,750г сухого красного вина, 1,5~2 ч ложки соли, перец

Приготовление

Мясо желательно взять с косточками. Например, рёбра, грудинку, тонкий край, лопатку. Мясо разрубить на порционные кусочки или оставить двумя-тремя крупными кусками.
Лук нарезать крупными полукольцами, морковь – шайбами, сельдерей – ломтиками.
В сковороде разогреть растительное масло и выложить овощи.

Посыпать овощи сахаром.
Обжаривать на большом огне при частом помешивании до начала зарумянивания.

Положить в сковороду томатную пасту, насыпать соль и перец, влить сухое красное вино.
Довести вино до закипания. Огонь убавить до минимума.
Тушить 5~7 минут, чтобы алкоголь выпарился.
В большой глиняный горшок или в чугунок уложить куски мяса.
На мясо выложить овощи с вином.
Если овощи находятся выше уровня жидкости, то долить немного воды.
акрыть горшок крышкой или затянуть горловину фольгой.
Поставить горшок в духовку и тушить при температуре t=170~180°C от 3-х до 4-х часов, в зависимости от жёсткости мяса.
Готовое мясо должно стать очень мягким, легко отходящим от костей.
Тушёное мясо можно сразу подать на стол.
При желании блюдо можно облагородить.
Мясо вынуть и освободить от костей.
Если куски большие, то нарезать ломтиками.
Овощи с жидкостью взбить блендером.
А затем на небольшом огне упарить до состояния пасты. (optional)

Directions
In a large bowl, combine cabbage and carrots. In a smaller bowl, make dressing by combining mayonnaise, vinegar, celery seed, sugar, salt and pepper. Toss dressing into cabbage mixture and let chill. Serve in a family style bowl.

Scalloped Potatoes and Ham

A nice way to use ham. Best when fresh.

Ingredients
4 tablespoons (1/2 stick) butter, plus extra for greasing dish
1/2 yellow onion, diced
1/3 cup all-purpose flour
1 1/2 cups half-and-half
1 1/2 cups milk
Freshly ground black pepper
2 pounds russet potatoes, washed thoroughly
3 cups diced cooked ham
2 cups grated Monterey Jack cheese
Chopped fresh parsley, for sprinkling, optional

Directions:

Preheat the oven to 375 degrees F.

Add the butter and onions to a large skillet over medium heat and saute until starting to soften, 3 to 4 minutes. Sprinkle the flour over the onions and whisk them together. Continue cooking the onion/flour mixture until golden brown, about 2 minutes. Stir in the half-and-half and milk and whisk around, allowing the mixture to thicken; this will take 3 to 4 minutes. Add some pepper, stir the sauce, reduce the heat and keep warm.

Slice the potatoes really thin using a mandolin or a really sharp knife, the thinner the better. Generously butter a 2-quart baking dish, then add half the sliced potatoes and half the diced ham. Sprinkle on half the cheese then pour on half the sauce from the skillet. Repeat with the rest of the ingredients, ending with a layer of cheese and sauce. Sprinkle extra pepper on top.

Cover the dish with foil and bake it for 40 minutes, then remove the foil and bake until the cheese is golden brown and the sauce is bubbling, an additional 20 to 30 minutes. Sprinkle with chopped parsley if desired and serve it up.
