I fried the vegetables too.<\/h3>\n<h3>Ingredients<\/h3>\n<ul>\n<li>4 cups vegetable stock<\/li>\n<li>2 (14.5 ounce) cans stewed tomatoes<\/li>\n<li>1 large potato, cubed<\/li>\n<li>1 onion, chopped<\/li>\n<li>2 stalks celery, chopped<\/li>\n<li>2 carrots, chopped<\/li>\n<li>1 large head cabbage, finely chopped<\/li>\n<li>2 tablespoons Italian seasoning<\/li>\n<li>1 (15 ounce) can kidney beans<\/li>\n<li>3 cups fresh corn kernels<\/li>\n<li>1 large zucchini, sliced<\/li>\n<li>1 cup uncooked orzo pasta<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<p>Alternatively:<\/p>\n<ul>\n<li>3 cups reduced-sodium vegetable or chicken broth<\/li>\n<li>1 (28-ounce) can diced tomatoes<\/li>\n<li>1 (15-ounce) can white (cannellini or navy) beans, drained<\/li>\n<li>2 carrots, peeled and chopped<\/li>\n<li>1 celery stalk, chopped<\/li>\n<li>1 cup onion, chopped<\/li>\n<li>1 teaspoon dried thyme<\/li>\n<li>1\/2 teaspoon dried sage<\/li>\n<li>2 bay leaves<\/li>\n<li>Salt and ground black pepper<\/li>\n<li>2 cups cooked ditalini pasta<\/li>\n<li>1 medium zucchini, chopped<\/li>\n<li>2 cups coarsely chopped fresh or frozen spinach, defrosted<\/li>\n<li>4 tablespoons grated Parmesan or Romano cheese<\/li>\n<li>Basil sprigs, garnish, optional<\/li>\n<\/ul>\n<\/div>\n<div>\n<h3>Directions<\/h3>\n<ol>\n<li>In a large soup pot combine the vegetable stock, the undrained tomatoes, potato, onion, celery, carrot, cabbage and Italian seasoning. Bring to a boil and reduce heat. Simmer for about 15 minutes.<\/li>\n<li>Stir in the beans, corn, zucchini and pasta; simmer for 10 to 15 more minutes until the vegetables are tender.
