{"id":149,"date":"2012-12-26T18:28:44","date_gmt":"2012-12-27T02:28:44","guid":{"rendered":"http:\/\/www.hhhh.org\/perseant\/foodlog\/?p=149"},"modified":"2012-12-29T09:29:34","modified_gmt":"2012-12-29T17:29:34","slug":"bagels","status":"publish","type":"post","link":"https:\/\/www.hhhh.org\/perseant\/foodlog\/?p=149","title":{"rendered":"Bagels"},"content":{"rendered":"<h2>One correction to the recipe &#8211; there is no need to turn the <a href=\"http:\/\/www.foodnetwork.com\/recipes\/emeril-lagasse\/homemade-bagels-recipe\/index.html\">bagels<\/a> over.<\/h2>\n<h2>Ingredients<\/h2>\n<ul>\n<li>2 cups warm water, about 110 degrees F<\/li>\n<li>2 (1\/4-ounce) packets <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/yeast\/index.html\">active dry yeast<\/a><\/li>\n<li>3 tablespoons <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/sugar\/index.html\">granulated sugar<\/a>, plus 1 tablespoon<\/li>\n<li>5 to 6 cups <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/flour\/index.html\">all-purpose flour<\/a><\/li>\n<li>2 teaspoons salt<\/li>\n<li>2 teaspoons <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/vegetable-oils\/index.html\">vegetable oil<\/a><\/li>\n<li>2 tablespoons yellow cornmeal<\/li>\n<\/ul>\n<h3>Optional Toppings:<\/h3>\n<ul>\n<li>1\/2 cup lightly toasted chopped <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/onion\/index.html\">onions<\/a> (2 teaspoons each)<\/li>\n<li>2 tablespoons <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/poppy-seed\/index.html\">poppy seeds<\/a> (about 1\/2 teaspoon each)<\/li>\n<li>2 tablespoons sesame seeds (about 1\/2 teaspoon each)<\/li>\n<li>1 tablespoon kosher salt (about 1\/4 teaspoon each)<\/li>\n<\/ul>\n<h2>Directions<\/h2>\n<p>Combine the water, yeast, and 3 tablespoons of the sugar in the bowl of an upright <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/mixer\/index.html\">mixer<\/a> fitted with a dough hook. Stir and let stand until foamy, about 5 minutes. Gradually add 4 cups of the flour and the salt, and mix until the mixture comes together.<\/p>\n<p>Add 1 to 1 1\/2 cups additional flour 1\/2 cup at a time to make a stiff dough, either stirring with the wooden spoon or working with your hands. Turn out onto a lightly floured surface and <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/knead\/index.html\">knead<\/a> until smooth and no longer sticky, about 5 minutes, adding just as much flour as needed. (<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/dough\/index.html\">Dough<\/a> should be heavier and stiffer than regular <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/yeast-bread\/index.html\">yeast bread<\/a> dough.)<\/p>\n<p>Grease a large bowl with 1 teaspoon of the oil. Place the dough in the bowl, turning to coat. Cover and let rise in a warm, draft-free spot until almost doubled, about 1 hour.<\/p>\n<p>Remove from the bowl and <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/punch\/index.html\">punch<\/a> down the dough. Divide into 12 equal pieces, about 2 to 3 ounces each, measuring about 4 inches across. Form each piece of dough into a ball. Roll each ball into a 4 to 6-inch log. Join the ends and place fingers through the hole and roll the ends together. Repeat with the remaining dough. Place on a lightly greased surface, cover with a clean cloth, and let rest until risen but not doubled in a draft-free spot, 20 to 30 minutes.<\/p>\n<p>Preheat the oven to 400 degrees F.<\/p>\n<p><a href=\"http:\/\/www.foodterms.com\/encyclopedia\/grease\/index.html\">Grease<\/a> a baking sheet with the remaining teaspoon of oil. Sprinkle the <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/cornmeal\/index.html\">cornmeal<\/a> on another baking sheet.<\/p>\n<p>In a large, heavy pot, bring 12 cups of water and the remaining tablespoon of sugar to a boil. In batches, add the <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/bagel\/index.html\">bagels<\/a> to the water and boil, turning, for 30 seconds to 1 minute. Dip the bagel tops in desired toppings. Flip bagels onto the prepared <a href=\"http:\/\/www.foodterms.com\/encyclopedia\/jelly-roll-pan\/index.html\">sheet pan<\/a>.
